Favorite Recipe Roundup

I've said it before and I'll say it again - I am no chef. 

And that, my friends, is why I love Pinterest. It's like my own hand-picked cookbook of sorts. I use it to meal plan, to oogle over foods I know I shouldn't eat, and also to remind myself just how not creative I am in the kitchen. 

I come from a long line of amazing cooks, but I guess I was too busymaking mud pies and completely ruining my brand new Doc Martens in the dirt field behind my neighborhood to really pick up on any of those skills. 

Maybe one day you will see some really pretty recipe posts styled by yours truly on this humble bloggy blog, but today is not that day. Until then, here is a list of some current favorite recipes. These are all mama bear AND man cub approved!

Easy Vegetarian Lasagne Soup

Yummy Mummy Kitchen nailed it with this super easy lasagna soup. It is rich, creamy, and a clean eat that kids will love. We have added lean ground turkey and man cub loved it even more! (Although he does pick out the mushrooms)

 

Grilled Lime Salmon with Avocado-Mango Salsa and Coconut Rice

This yummo summer dish is from Cooking Classy. When mango isn't in season or if I'm short on time I use a jar of Trader Joe's pineapple salsa instead of the mango-avocado salsa. Man Cub loves salmon so this one is always a hit!

5-Ingredient White Chicken Chili

I think we could eat this super easy white chicken chili 7 days a week, year round. I add extra avocado because, duh. #basic

 Gimme Some Oven has a few other 5-ingredient soups that I want to try out too! 

Grilled Stuffed Chicken Italiano

So, Man Cub does pick out the veggies form this one. But that's only because he is a funny little human and only eats raw vegetables... ya, I know.

*sigh* I love cheese. So this recipe from Mom Foodie really gets me, being high in protein, stuffed with my favorite veggies, all rolled together with CHEESE.
